From durum wheat pasta to egg pasta, you will discover how shape, thickness, and structure influence how a sauce adheres, distributes, and enhances each preparation. Through theoretical and practical sessions, you will cook alongside the chef, working on classic recipes and contemporary interpretations.
During the experience, the focus will also be on selecting raw ingredients: fresh produce, small producers, and a kitchen built around seasonality. An essential and conscious approach that transforms the simplicity of pasta into something extremely refined.
